Docs: Set default theme to Thunder Blocks

Summary

It's been a while since we launched the
SYL/thunderblocks theme as part of our Design
System. Now that most of our experiences
have migrated to it, it's time to set it as
the default theme in Storybook.

Verify that the docs now load thunderblocks as the default theme.
