The docs state that "some" options can be overridden in theme.toml. Is there a list of what can/can't be?

Specifically, I want to override border_symbol = " ", but my theme.toml is not overriding the flavors option:

[flavor]
dark = "catppuccin-mocha"

[manager]
border_symbol = " "

Anything else?
