Will mail server be able to serve as a client to other services?

If i would be self-hosting my email, would it be possible to add accounts from other services to be managed through stallwartlabs mail server?

Basically it would have two additional roles:

• client/frontend for e.g. gmail or outlook via imap (also utilize their smtp server to send outgoing emails)
• backup for emails on those other services

That's not possible, Stalwart is a mail server and your domain name(s) need to point to the server where Stalwart is running.
