Update examples & code snippets in Cluster API book to v1beta2

Hey folks,

we are currently in the process of bumping all our APIs (core CAPI, CABPK, KCP & CAPD) to v1beta2.

Accordingly we have to update our examples & code snippets in the Cluster API book.

We should bump the apiVersions used but we also have to adjust the objects accordingly (e.g. if a field was renamed).

This should be done according to the latest state of our CRDs on main.

All cases can be found by searching for "cluster.x-k8s.io/v1beta1" in docs/book/src

I think it makes sense to split it up as follows:

• PR for Cluster: 🌱 Update examples & code snippets in Cluster API book to v1beta2 for Cluster #12483
• PR for ClusterClass: 🌱 Update examples & code snippets in Cluster API book to v1beta2 for ClusterClass #12491
• PR for everything else: 🌱 Update resource in docs #12562
