move the wiki to gitbook

Hi guys, I'm pretty new here and I love open source. I'm currently sponsored by big tech companies in terms of open source. I would like to help in working with documentation and I would recommend GitBook for the documentation of JS.ORG. I guess for me would be a big plus for others. This is only an idea and at the same time a suggestion.

👋 What would the advantage be here? We don't have that much wiki content currently, and GitHub's wiki feature seems to serve us well for what we do have -- and keeps it on-platform right with the repo where folks will be making PRs and may need to reference it.
