Add support for pager / improve console

Some help texts can be super long. Rich has the ability to use a pager - it would be nice to be able to opt into using this.

More ideas to improve the console:

• Flag to use stderr instead of stdout (rich docs)
• Ability to pass custom stream for the console if desired (eg. StringIO stuff)
