Feature Request: Support S3 Gateway VPC Endpoint provisioning during cluster creation

Hi team,

When creating a new EKS cluster and its associated VPC using eksctl create cluster, is it possible (or can support be added to the schema) to automatically provision an S3 Gateway VPC Endpoint within that VPC?

This functionality would be similar to what is supported in AWS CDK for VPCs.
