The roles of manufacturer, model, and labels in a profile

Does the project include object model categorization based on manufacturer, model, and labels? For example, fan equipment from different manufacturers and models requires different Lua execution scripts. How should I define the physical model? Should I match the scripts based on manufacturer and model, or name?

For the Device Profile, the manufacturer, model, and labels fields are just metadata. EdgeX doesn't really use them.
They can be utilized by the Device Service or App Service implementation.
You can implement your own Device Service or App Service to run different Lua script according to manufacturer, model, and labels.
