Modernize to .NET SDK Containers

Let's remove Dockerfiles where applicable and update to use the new .NET SDK style containerization.

We will want to update

• All projects to use sdk style properties
• documentation to run dotnet build and publish commands
• Update compose files where necessary
• Need to update ebook as well
