From what I can see it is only possible to monitor docker containers on the same machine as the checkmate server is running on, exposing docker.sock access via volume.
What if I want to monitor docker containers on different machines? Would I have to spin up checkmate server installations on each and every one of them?

Currently yes. But we're planning to have Capture to have the Docker host monitoring capability and tag each Capture output/payload with the host’s name or ID so they all land in one dashboard.
Awesome, this feature would be the turning point for me to ditch Uptimekuma/Beszel and run Checkmate as my lightwieight-monitoring-solution. Looking forward to it!
