Enable OpenAPI spec validation for responses

We’ve got JSON schema validation already, but OpenAPI spec validation would be great to have, especially since this is a perfect ramp-up for a provider-side integration with contract testing, similar to https://docs.pactflow.io/docs/examples/bi-directional/provider/restassured/
