Refactor Linkry functions to pass in logger instead of using console.error

Functions in src/api/functions/linkry.ts should be passed in logger key of type FastifyBaseLogger instead of using console.error. See issueAppleWalletMembershipCard in src/api/functions/mobileWallet.tsfor an example.
