Add support for interactivity and passing plot kwargs to graph plotting

The graph plotting code should support kwargs that can be passed through to Makie, along with allowing users to select different defaults for all the various kwargs that we set.

It should also add back support for interactivity.

Is adding support for interactivity possible without making GLMakie a dependency?

Probably not, but for now it isn't supported so there is no need for dealing with any issues related to GLMakie and CI.
