Improve metrics on metadata tag usage

Nathalie Idea: Add better metric gathering to BFF for interpreting which metadata fields people are using and for what (we have this partially)

Actually I think this exists as a tag from Gideon as well? Perhaps a round of metric improvement could be done as a unit
